Description

This unique side dish combines Japanese sweet potatoes with lemon and cheese for a super flavorful dish!

Ingredients

  • 2 lbs Japanese sweet potato
  • 2 T olive oil
  • Sea salt and pepper to taste

Dressing:

  • 1 lemon zested and juiced
  • 1/4c chopped basil
  • 1/4 c parsley
  • 2 T grated romano cheese
  • sea salt and pepper to taste

Instructions

  1. Preheat grill.
  2. Wash, peel and cut potatoes 1/4 inch thick
  3. Toss them with olive oil salt and pepper and place on grill.
  4. Mix dressing by combining zest of lemon, juice of 1 lemon, basil, parsley, romano cheese, olive oil salt and pepper.
  5. After potatoes are grilled and cooked through, toss with dressing and serve.
