A colorful chicken dish that is easy to make and will please the entire family.

Ingredients
- 1 tomato
- 1/2 onion
- 3 garlic cloves
- 2 tsp paprika
- 1 tsp thyme, crumbled and divided
- ¾ tsp sea salt, divided
- 1 pound each skinless chicken drumsticks and skinless thighs
- olive oil cooking spray
- 4 cups peeled, diced butternut winter squash (about 2 medium)
- 1 cup organic apple juice
- 4 garlic cloves, minced
- 1/8 tsp pepper, or to taste
Instructions
- Preheat oven to 400°F.
- Combine tomato, half onion, and garlic and process to make tomato sauce
- In a small bowl, stir together tomato paste, paprika, ½ teaspoon of thyme, and ½ teaspoon of sea salt. Spray baking tray with cooking spray. Rub chicken with tomato paste mixture and set aside.
- In a 9” x 13” baking pan, stir together squash, apple juice, garlic, pepper and remaining ½ teaspoon thyme and ¼ teaspoon sea salt. Place chicken pieces on top of squash.
- Cover and bake for 30 minutes. Then remove cover and continue baking for an additional 20 minutes.
- Transfer to a serving platter arranging cooked chicken pieces on top of squash.
