Description
This paleo-inspired Cheeseburger Casserole uses Dr. Brown approved goat or sheep cheese and mixes it with sweet potato and ground beef for a delicious “burger and fries” flavored dish!

Ingredients
- 2 lbs grass-fed ground beef
- 32 oz frozen sweet potato tots or 4 large sweet potatoes, cubed
- 1 small onion, diced
- 1 c shredded goat or sheep cheese
- 1/2 c goat or sheep feta
- 8 oz soft creamed goat cheese
- Sea salt and pepper to taste
- 1/2 T olive oil
Instructions
- Preheat oven to 350F.
- In a skillet add oil and heat over med-high heat.
- Add diced onion and cook 2 min.
- Add ground beef, salt and pepper to taste.
- Cook and brown well.
- Add meat mixture to large casserole dish.
- Add creamed goat cheese and blend well. Add tots (or sweet potatoes) and remaining cheese and blend well.
- Place in oven for 40 minutes and serve.
