Cheeseburger Casserole

Description

This paleo-inspired Cheeseburger Casserole uses Dr. Brown approved goat or sheep cheese and mixes it with sweet potato and ground beef for a delicious “burger and fries” flavored dish!

Ingredients

  • 2 lbs grass-fed ground beef
  • 32 oz frozen sweet potato tots or 4 large sweet potatoes, cubed
  • 1 small onion, diced
  • 1 c shredded goat or sheep cheese
  • 1/2 c goat or sheep feta
  • 8 oz soft creamed goat cheese
  • Sea salt and pepper to taste
  • 1/2 T olive oil

Instructions

  1. Preheat oven to 350F.
  2. In a skillet add oil and heat over med-high heat.
  3. Add diced onion and cook 2 min.
  4. Add ground beef, salt and pepper to taste.
  5. Cook and brown well.
  6. Add meat mixture to large casserole dish.
  7. Add creamed goat cheese and blend well. Add tots (or sweet potatoes) and remaining cheese and blend well.
  8. Place in oven for 40 minutes and serve.
