Description

This chili dish combines buffalo meat and beef with veggies and spices to create a savory, warm meal that is very filling and satisfying!

Ingredients

  • 1 T Coconut Oil
  • 1/2 c Onion, chopped
  • 1/2 c Celery, chopped
  • 2 Cloves Garlic, minced
  • 1 c Green Pepper, chopped
  • 2 t Oregano
  • 3 t Chili Powder
  • 2 t Ground Cumin
  • 1/2 t paprika
  • 1 t Sea Salt
  • 1 8 oz Can Organic Crushed-Tomatoes
  • 3/4 lb Ground Buffalo
  • 3/4 lb Ground Beef
  • 1/2 Cup goat cheddar or manchego cheese, shredded

Instructions

  1. In a large skillet melt oil and saute onions, celery, garlic, and peppers 3 – 4 minutes until onion is translucent.
  2. Add ground buffalo, ground beef, oregano, chili powder,paprika, and cumin.
  3. Continue cooking, stirring frequently for 5 – 6 minutes.
  4. Pour salt and tomatoes into pot.
  5. Cover, reduce heat and simmer for a minimum of 1 hour for best flavor.
  6. Garnish with grated cheese.
