Ingredients
- 6 Roma tomatoes, diced
- 1 jar diced tomatoes (juice reserved)
- 1 green onion
- 1 white onion small, diced
- 2 jalapeños, halved
- 1/2 c fresh cilantro
- 1 t cumin
- 2 T green chilis
- Juice of 2 limes approx 2 T
- 5 cloves minced garlic
- 1 1/2 t sea salt
Instructions
- Dice Roma tomatoes and add to bowl along with minced garlic and 1/2 diced onion.
- Add remaining diced onion to food processor with jalapeño, diced tomato, green chilis, cumin, salt, and pulse until desired consistency reached. Some like smoother salsa some like chunky.
- Add 3/4 blended salsa to bowl with diced onion and tomatoes. Reserve the remaining 1/4 in food processor and add cilantro and blend until desired consistency reached.
- Add reserved tomato juice if you’d like.
- Add cilantro mixture to rest of salsa.
- Allow to chill for 1-2 hours but it only gets better with time.
