Featured Recipe: Authentic Red Salsa

Ingredients

  • 6 Roma tomatoes, diced
  • 1 jar diced tomatoes (juice reserved)
  • 1 green onion
  • 1 white onion small, diced
  • 2 jalapeños, halved
  • 1/2 c fresh cilantro
  • 1 t cumin
  • 2 T green chilis
  • Juice of 2 limes approx 2 T
  • 5 cloves minced garlic
  • 1 1/2 t sea salt

Instructions

  1. Dice Roma tomatoes and add to bowl along with minced garlic and 1/2 diced onion.
  2. Add remaining diced onion to food processor with jalapeño, diced tomato, green chilis, cumin, salt, and pulse until desired consistency reached. Some like smoother salsa some like chunky.
  3. Add 3/4 blended salsa to bowl with diced onion and tomatoes. Reserve the remaining 1/4 in food processor and add cilantro and blend until desired consistency reached.
  4. Add reserved tomato juice if you’d like.
  5. Add cilantro mixture to rest of salsa.
  6. Allow to chill for 1-2 hours but it only gets better with time.
