This is a quick and easy zucchini side dish with a kick.

Ingredients
- 1 T butter
- 1/8–1/4 t cayenne pepper
- 2 large zucchinis, cut into small chunks
- 1/2 t grated lemon peel
Instructions
- In a 10 in skillet, melt butter over medium heat and stir in red pepper.
- Stir in zucchini and continue cooking, stirring occasionally, 4 minutes or until crisp-tender.
- Toss with lemon peel.
