Paleo Onion Rings

Ingredients

  • 2 eggs
  • 1/2 c coconut milk
  • 2 T parsley
  • 2 t garlic powder
  • 2 t salt
  • 2 t arrow root powder
  • 1/2 c coconut flour
  • 2 c almond meal
  • 1.5 c avocado oil

Instructions

  1. Mix together the eggs and coconut milk in a medium bowl.
  2. Mix everything else except the onions and oil (the remaining dry ingredients) in a separate medium bowl.
  3. Dip the onion slices into the wet ingredients and then coat them with the dry ingredients.
  4. In a shallow 10-12 in skillet, preheat the oil on medium heat.
  5. Once the oil is hot, add the onions and fry until crisp and slightly browned on both sides (about 2.5 minutes per side).
