Ingredients
- 2 eggs
- 1/2 c coconut milk
- 2 T parsley
- 2 t garlic powder
- 2 t salt
- 2 t arrow root powder
- 1/2 c coconut flour
- 2 c almond meal
- 1.5 c avocado oil
Instructions
- Mix together the eggs and coconut milk in a medium bowl.
- Mix everything else except the onions and oil (the remaining dry ingredients) in a separate medium bowl.
- Dip the onion slices into the wet ingredients and then coat them with the dry ingredients.
- In a shallow 10-12 in skillet, preheat the oil on medium heat.
- Once the oil is hot, add the onions and fry until crisp and slightly browned on both sides (about 2.5 minutes per side).
