Southern Blackened Chicken with Zucchini Pasta

This chicken dish with zucchini pasta features bold southern flavors that keep you coming back for more!

Ingredients

For Blackened Chicken:

  • 4 Boneless skinless chicken breast
  • 1 T Olive Oil
  • 1 t Smoked Paprika
  • 1/2 t Cayenne Pepper
  • 1/2 t Granulated Garlic
  • Salt and Pepper to Taste

For Zucchini Pasta:

  • 6 oz sheep feta
  • 3 T grass-fed butter
  • 1 t minced garlic
  • 1/4 c white wine
  • 1 T fresh minced parsley
  • 1 c baby spinach
  • 6 large zucchini, spiraled

Instructions

  1. Preheat grill.
  2. Mix paprika, cayenne pepper, garlic, salt and pepper, and olive oil in a large Ziplock bag.
  3. Add chicken breast and shake well making sure chicken is covered well. Set Aside.
  4. Add butter to a skillet and place on med-high heat.
  5. Once hot add minced garlic.
  6. Let simmer and add wine and zucchini noodles cooking to al dente (about 5 minutes).
  7. Add spinach.
  8. Once spinach has wilted add feta and stir well. You can smooth the feta and a little wine before to give a smoother texture.
  9. Add to Plate.
  10. Grill Chicken and place on top of zucchini mixture.
  11. Serve and enjoy.
