Description
This is a tasty green bean side dish that incorporates onion, tomatoes and parsley.

Ingredients
- 2 T olive oil
- 1 small onion, diced
- 2 small cloves garlic, minced or pressed through a garlic press
- 1 c canned chopped tomatoes
- 1 lb green beans, stem ends snapped off
- sea salt
- ground black pepper
- 2 T minced parsley
Instructions
- Heat oil in a large sauté pan over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and continue cooking another minute.
- Add tomatoes and simmer until juices thicken slightly, about 5 minutes.
- Add green beans, 1/4 t salt, and a few grindings of pepper to pan.
- Stir well, cover and cook, stirring occasionally, until beans are tender but still offer some resistance, about 20 minutes.
- Stir in parsley and adjust seasonings to taste.
