Cranberry Pecan Side Salad

Description

This simple side salad is quick to whip up and goes along great with just about any main dish. The cranberries, nuts, and spinach make for a great flavor combination!


Scale

Ingredients

  • 4 c baby spinach leaves
  • 1/4 c chopped pecans
  • 1/4 c unsweetened cranberries
  • 1/2 c grape or cherry tomatoes, sliced
  • 2 green onions, sliced
  • 1/2 lemon
  • 2 T extra virgin olive oil

Instructions

  1. Put spinach into a large bowl.
  2. Top with pecans, cranberries, tomatoes, and green onions.
  3. Drizzle with olive oil.
  4. Squeeze lemon juice over salad.
  5. Toss and serve.
