Carrot Rice

Description

This is a unique and tasty way to eat carrots, and the texture makes a great substitute for rice!

Ingredients

  • 4 large carrots, peeled and grated
  • 1 teaspoon minced garlic
  • 1/2 cup sliced leeks
  • 1/2 cup & 1 tablespoon vegetable broth
  • 1 tablespoon lemon juice
  • Pepper to taste
  • 1 teaspoon parsley, chopped

Instructions

  1. In pan add garlic and leeks and cook for one minute
  2. Add carrots and lemon juice and cook for 1 minute
  3. Add broth and let reduce until liquid is fully absorbed
