Per Dr. Brown’s request, we have been trying to add more breakfast recipes to our database, and if you ask me, Celia knocked it out of the park with this one! It really is a great dish for any meal of the day, but it does use your typical breakfast ingredients like turkey bacon, eggs, and potatoes. Serve these at your next Sunday brunch, and you are sure to please the crowd!
Ingredients:
  • 2 large sweet potatoes (regular or Japanese)
  • 4 eggs
  • 4 pieces cooked turkey bacon, diced
  • ¼ yellow onion, diced
  • 2 green onion/chive stalks, sliced
  • 1 t parsley
  • ½ T olive oil
  • Sea salt and black pepper to taste

Instructions
Step 1: Preheat oven to 400F. Wash potatoes and place in preheated oven for 1 hr. Remove and allow to cool.
Step 2: In small skillet heat olive oil over medium heat. Add onion, sea salt, pepper, parsley and cook 2 minutes.

Step 3: Stir in chopped bacon. Cook 3-4 minutes and allow flavors to blend.
Step 4: Slice potatoes in half length wise and scoop out a good portion in center of potato. Repeat.

Step 5: Add potato flesh to skillet bacon mixture. Combine well.

Step 6: Place skins on baking sheet and scoop mixture back into potatoes and make a dent in the center for your egg. Crack egg into middle of potato.

Step 7: Place back in oven for 12-15 minutes or until desired wellness is reached.

Step 8: Sprinkle with green onion, plate, and serve immediately.

The key with this meal is to bake the potatoes and bacon ahead of time so that it can be a much quicker breakfast. I know my family wouldn’t have the patience to wait an hour and half in the morning!
