Ingredients
- 1 whole chicken
- 1/2 T fresh thyme, chopped
- 1/2 T fresh rosemary, chopped
- 1/4 cup olive oil
- 1/2 c sliced shallots
- 3 cloves sliced garlic
- 1 lemon sliced
- 1 half lemon squeezed
- 1/2 c chicken stock
- Sea salt and white pepper to taste
Instructions
- In a food processor blend thyme, rosemary, olive, pepper and sea salt. Set aside.
- Slice lemon, shallot and garlic and place on bottom of pan
- Brush top and bottom of chicken with olive oil and place breast side up in cast iron pan.
- Cook in oven at 350F for 30 minutes.
- Remove and add chicken stock and lemon juice.
- Place back in oven cook additional 15 minutes or until internal temperature reaches 165F. If chicken becomes too brown on top cover with foil.
- Remove and cool 15 minutes carve and serve.
